From the kitchen of Cathy Illman
- 1 ripe banana, mashed
- 1 cup almond or coconut milk
- 1/3 cup shredded unsweetened coconut
- 2 tablespoons chia seeds
- ½ teaspoon vanilla
- ½ teaspoon cinnamon
- Place ingredients in a blender to mix.
- Place in the refrigerator for 3 to 4 hours or overnight to thicken, then serve.
- Top with berries if desired.
