Chia Pudding

Serves 1

Ingredients

  • 1 ripe banana, mashed
  • 1 cup almond or coconut milk
  • 1/3 cup shredded unsweetened coconut
  • 2 tablespoons chia seeds
  •  ½ teaspoon vanilla
  • ½ teaspoon cinnamon

Instructions

  1. Place ingredients in a blender to mix.
  2. Place in the refrigerator for 3 to 4 hours or overnight to thicken, then serve.
  3. Top with berries if desired.
